Cinnamon Cocoa Meringues with Vanilla Ice Cream and Cinnamon Chocolate Sauce

I have decided to give the Master Baker challenge a try. The first challenge was cinnamon, which barks right up my alley. My challenge was finding something truly worth posting about. I didn't want to just do a cookie, or a pie, or a bread. I wanted to do something different.

You saw how over the holidays, I had a meringue obsession. It carried over into 2008. I really wanted to give this a try.

Found a tempting recipe here, and had to try it. I made a few changes though for the sauce. I didn't have any bittersweet chocolate, so I used unsweetened cocoa and 3 ounces of semi-sweet chocolate chips instead. The sauce came out great! I think you could actually add more cinnamon to it if you wanted.

Assemble by starting with the meringue, layer with vanilla ice cream, and top with cinnamon chocolate sauce.

We'll see how this stacks up to the competition. I'm looking forward to seeing what the other Master Bakers came up with.

I have never thought to put ice cream over a meringue. That sounds and looks so delicious.

Oh my gosh, I want one! What a fabulous combination of crunchy, creamy, chocolaty goodness. I should try making that next time I have to host my bookclub; they would absolutely LOVE that! Nice job!
